Brown Rice & Greek Chicken Recipe

I posted these bowls on my instal-story a few weeks ago and a few people DMed me and asked for the recipe so here it is! First time I've taken photos while cooking, it's a challenge! Anyway, enjoy the post and let me know if you'd like more recipe posts or more fashion/lifestyle type stuff! 

 

 

 

1. Chicken & Marinade

 

1 boneless, skinless chicken breast (chopped into bite size pieces)

1/8 of a cup olive oil (or vegetable oil)

¼ of a cup of fresh lemon juice

1Tbs Red wine vinegar

1Tbs dried oregano

1/3 of a cup of light Greek yougurt

Salt and Pepper

 

Chop the chicken up into bite size pieces and set aside in a bowl. Add the remaining ingredients in a separate bowl to make the marinade. Add the chick to the marinade and set aside in the fridge for 30mins-12hours. Once out of the fridge fry the chick in at medium heat until cooked then set aside in the fridge until it’s time to assemble your bowls. 

 

 

 

 

2. Cucumber & Tomato Salad

 

½ a Lebanese cucumber (diced)

15-20 cherry tomatoes (halved)

¼ of a cup of lemon juice

½ tsp of dried oregano

½ a tsp of minced garlic

1 Tbs of red wine vinegar

(you can add red onion if you want)

 

Dice the cucumber, half the tomatoes and set aside in a bowl. Add remaining ingredient in a separate bowl and whisk together to make the dressing. Add dressing to cucumber and tomato salad and set aside in the fridge until it’s time to assemble your bowls.

 

 

 

 

 

 

3. Tzatziki

 

1 cup of Light Greek Yogurt 

½  Lebanese cucumber (sliced thinnly)

1 tsp minced garlic

1 tsp dill (chopped finely)

2 Tsp lemon juice

1 Tbp lemon zest

 

Combine all ingredients in a bowl and mix thoroughly. Set aside in the fridge until it’s time to assemble your bowls.

 

 

 

 

 

Time Saver: 

I made the marinade and set it aside, then made all the other components (including making 1.5 cups of brown rice), before frying the chicken and adding some lemon!

 

 

 

 

 

 4. Assembling the Bowls

 

Firstly, fill the bottom of the container with a bed of brown rice. Add the salad, chicken and lastly the tzatziki and you're done! All ready for lunch for the next 3 days!
