Raw Lamington Bites Recipe
I got a bit sick of making bliss balls and wanted to try something similar but different. Don't worry I'll probably be back into the bliss balls in a few weeks time! There's a lot of different versions of Raw Lamington Bites out there on Pinterest but I just wanted a short and simple one so I combined a few recipes and came up with this one! It's basically 5 ingredients, doesn't take too long to whip up and tastes so good, so win/win for me! It's also vegan for anyone out there wondering! Ingredients, method and fun photos are below, enjoy!

Ingredients:
Inside:
1 cup Cashews (or any other nuts/grains)
1/4 cup coconut oil
1/2 cup unsweetened desiccated/shredded coconut
2 Tbs Maple Syrup
Outside:
100g Dark Chocolate (melted) (vegan or regular)
1 handful of unsweetened desiccated coconut
Method:

Place cashews, coconut oil, coconut and maple syrup in food processor.
Process in 20second bursts for a few mins until a smooth mixture
Line a square/rectangle baking tin with baking paper
Pour mixture into baking tin and place in freezer for 2-3 hours

Once frozen, cut the base into square bite sized pieces (mine was a bit crumbly- still yummy)
Melt dark chocolate in saucepan or in microwave (in 30sec bursts, stirring between each burst)
Coat each square in dark chocolate and sprinkle desiccated coconut on top and put back in freezer for an hour.
