Raw Lamington Bites Recipe

I got a bit sick of making bliss balls and wanted to try something similar but different. Don't worry I'll probably be back into the bliss balls in a few weeks time! There's a lot of different versions of Raw Lamington Bites out there on Pinterest but I just wanted a short and simple one so I combined a few recipes and came up with this one! It's basically 5 ingredients, doesn't take too long to whip up and tastes so good, so win/win for me! It's also vegan for anyone out there wondering! Ingredients, method and fun photos are below, enjoy!

Ingredients:

Inside:

1 cup Cashews (or any other nuts/grains)

1/4 cup coconut oil

1/2 cup unsweetened desiccated/shredded coconut

2 Tbs Maple Syrup

Outside:

100g Dark Chocolate (melted) (vegan or regular)

1 handful of unsweetened desiccated coconut

Method:

  • Place cashews, coconut oil, coconut and maple syrup in food processor.

  • Process in 20second bursts for a few mins until a smooth mixture

  • Line a square/rectangle baking tin with baking paper

  • Pour mixture into baking tin and place in freezer for 2-3 hours

  • Once frozen, cut the base into square bite sized pieces (mine was a bit crumbly- still yummy)

  • Melt dark chocolate in saucepan or in microwave (in 30sec bursts, stirring between each burst)

  • Coat each square in dark chocolate and sprinkle desiccated coconut on top and put back in freezer for an hour.
