Pumpkin Doughnuts Recipe
Basically, I'm like any other human who loves doughnuts but struggles with the internal battle of trying to be healthy. So why not do both? These pumpkin doughnuts tasted pretty good and were literally the easiest thing to make, throw everything in a bowl and mix (my favourite kind of recipe)! I got the recipe from Detoxinista just one day when I was googling around. They are gluten free and vegan so lots of wins if you are celiac or follow a plant-based diet! Recipe is below!
3/4 cup oat flour (gluten-free)
1/2 cup pumpkin puree
1/2 cup coconut sugar
1/4 cup coconut oil (melted)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/8 teaspoon fine sea salt
1/4 teaspoon baking soda
1/2 teaspoon vanilla extract
1 teaspoon apple cider vinegar
1. Preheat the oven to 180 degrees Celsius and grease the doughnut pan with some coconut oil (don't use all of it, just a little).
2. Combine all ingredients in a bowl and mix.
3. Spoon or pipe mixture into doughnut pan.
4. Bake for 20mins and allow to cook for 15mins before eating.
